TIMING DIFFERENCES IN CUSTOMER ORDERS: AN EXAMPLE IN LOCAL FOOD SERVICE CHAIN

ABSTRACT

Routinely local food services (local fast food) in Honduras do not explore or evaluate issues related to accounting, management and/or costumer services. They are mainly focused on processing regulations and sales volume. Some SMEs (small and medium enterprises) investigate the effects of speed-service in cashiers (order takers). The evaluation took place applying statistics to evaluate the productivity in terms of order-timing during the main shift in costumers served indicator under certain assumptions. The statistical tool used was Analysis of Variance to analyze differences among order lines.
